  • 2 tablespoons granulated sugar
  • Oil for cooking
  • Sweetened whipped cream
  • Assorted berries

  • Maple syrup

Instructions

  1. Separate the egg whites from the yolks into two bowls.
  2. Add milk, vanilla extract, and lemon zest in the yolk bowl and whisk until combined.
  3. Mix in flour and baking powder until smooth.
  4. Beat egg whites until soft peaks form, gradually adding sugar until stiff peaks form.
  5. Fold the egg whites into the yolk mixture gently in three parts.
  6. Heat a non-stick skillet over low heat, grease lightly, and spoon dollops of batter into the pan.
  7. Cover and cook for 4-5 minutes until golden, then flip and cook for another 4-5 minutes.
  8. Serve warm topped with whipped cream, berries, powdered sugar, and maple syrup.
