Flavorful Caribbean Jerk Shrimp Skewers bursting with spice and grilled to perfection, ideal for any gathering.

  • 1 lb large shrimp, plump and tender
  • 1 red bell pepper, cut into pieces
  • 1 red onion, cut into chunks
  • 1 cup fresh pineapple chunks
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 2 tsp ground allspice
  • 1 tsp dried thyme
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 2 cloves garlic, minced
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 small piece of fresh ginger, grated (about 1 tsp)
  • 1 Scotch bonnet or habanero pepper, finely chopped (optional)

Instructions

  1. Whisk together allspice, thyme, cinnamon, smoked paprika, cayenne pepper, black pepper, salt, garlic, brown sugar, soy sauce, lime juice, olive oil, ginger, and Scotch bonnet pepper in a medium bowl.
  2. Add large shrimp to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 30 minutes to 1 hour.
  3. Soak wooden skewers in water for 30 minutes and prepare the red bell pepper and onion by cutting them into chunks.
  4. Thread the marinated shrimp onto the skewers, alternating with pineapple chunks, bell pepper, and red onion.
  5. Preheat your grill over medium-high heat and brush with olive oil to prevent sticking.
  6. Grill the skewers for 2-3 minutes on each side, until shrimp are pink and opaque.
  7. Drizzle with olive oil and lime juice, garnish with cilantro, and serve hot.

Notes

Use fresh shrimp and avoid overcooking for juiciness. Soak skewers in water before grilling.
