  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup Dijon mustard
  • 1/4 cup unsalted butter, softened
  • 1/4 cup heavy cream (optional, for a richer sauce)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Pat the beef tenderloin dry with paper towels.
  3. Rub the entire roast with olive oil, then season generously with kosher salt and freshly ground black pepper.
  4. Combine minced garlic, chopped rosemary, and thyme. Rub this herb mixture all over the beef tenderloin.
  5. Heat a large oven-safe skillet over medium-high heat and sear the beef tenderloin on all sides for 3-4 minutes per side.
  6. Remove from heat and brush the tenderloin with Dijon mustard.
  7. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  8. Remove the beef from the oven and cover loosely with foil. Let rest for 10-15 minutes before slicing.
  9. Melt butter in the same skillet over medium heat, add heavy cream, and simmer for 2-3 minutes.
  10. Slice the beef into 1-inch thick slices and drizzle with the butter sauce.

Notes

Let beef sit at room temperature for 30 minutes before cooking for even cooking. Use a meat thermometer for precision.
