  • 2 lbs ground beef (80/20 blend)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 4 tbsp keto-friendly taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • ½ cup heavy whipping cream
  • 1 ½ cups shredded cheese (cheddar or Mexican blend)
  • 1 jalapeno, sliced (optional)

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Cook the ground beef, diced onion, bell pepper, and minced garlic in a large skillet over high heat until browned.
  3. Drain any excess grease.
  4. Stir in taco seasoning and tomato paste, mixing well.
  5. Spread the meat mixture in a 9×13 inch casserole dish.
  6. Whisk together the eggs and heavy whipping cream in a bowl.
  7. Stir in half of the shredded cheese.
  8. Pour the creamy mixture over the meat, ensuring even coverage.
  9. Sprinkle the remaining cheese on top and add sliced jalapenos if desired.
  10. Bake for 15-17 minutes until cheese is melted and bubbly.
  11. Let it rest for 5 minutes before serving.

Notes

For a more intense flavor, add a dash of lime juice or top with fresh cilantro before serving. You can swap the ground beef for chicken or turkey, and incorporate assorted vegetables for added nutrition.
