Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Beat the softened butter and eggs in a separate bowl until creamy, then add the sour cream, key lime juice, zest, and vanilla extract; stir to combine.
  4. Gradually mix the dry ingredients into the wet until you have a smooth batter.
  5. Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Cool the cakes completely before preparing the frosting.
  7. Beat the cream cheese and butter until smooth, then gradually add the powdered sugar, key lime juice, and zest.
  8. Frost the cooled cakes liberally with the key lime cream cheese frosting.
  9. Sprinkle additional zest over the top for decoration.
