  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup white sugar
  • 6 tablespoons butter, melted
  • 3 cups cream cheese, softened
  • 1 cup white sugar
  • 3 tablespoons all-purpose flour
  • 3/4 cup key lime juice
  • 1 tablespoon key lime zest
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl. Press firmly into the bottom of a 9-inch springform pan.
  3. Beat together cream cheese and 1 cup of sugar until smooth.
  4. Gradually add flour, key lime juice, key lime zest, and vanilla extract to the cream cheese mixture.
  5. Incorporate eggs one at a time, mixing until blended.
  6. Stir in sour cream and pour the mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes until the center is set but slightly wobbly.
  8. Cool in the oven with the door ajar for about 1 hour.
  9. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

For the best flavor, use freshly squeezed key lime juice and zest. Store in an airtight container in the refrigerator for up to 5-7 days.
