  • 1 tablespoon lime zest (from about 2 limes)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 cup sour cream
  • 1 cup powdered sugar
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon lime zest

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Grease and flour a 9×5-inch loaf pan.
  3. Whisk together flour, baking powder, and salt in a medium bowl; set aside.
  4. Cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  5. Add eggs one at a time, beating well after each.
  6. Stir in vanilla extract, lime zest, and lime juice.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with sour cream.
  8. Mix until just combined.
  9. Pour the batter into the prepared pan.
  10. Bake for 55-65 minutes until a toothpick comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. Whisk together powdered sugar, fresh lime juice, and lime zest to make the glaze.
  13. Drizzle the glaze over the cooled cake and let it set before slicing.

Notes

For lighter cake, use Greek yogurt instead of sour cream. Room temperature ingredients yield the best texture.
