A quick and flavorful Korean BBQ Beef Rice Stack featuring marinated beef served over a fluffy bed of rice, topped with fresh veggies.

Ingredients

  • 1 lb flank steak or skirt steak, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 2 cups cooked white rice
  • 1/2 cucumber, thinly sliced
  • 1/2 avocado, sliced
  • 1 tbsp sesame seeds
  • 1/4 cup green onions, chopped
  • 1 tbsp gochujang
  • Salt and pepper to taste

Instructions

  1. Combine the soy sauce, sesame oil, honey, minced garlic, rice vinegar, grated ginger, and a pinch of salt and pepper in a large bowl to create the marinade.
  2. Add the thinly sliced beef, ensuring it’s well-coated, and marinate for at least 30 minutes.
  3. Prepare the white rice according to your preference and keep warm.
  4. Heat a grill or skillet over medium-high heat.
  5. Remove the beef from the marinade and cook for 2-3 minutes per side until browned and cooked to your desired doneness.
  6. Layer the warm rice in a bowl or on a plate, followed by the grilled beef slices.
  7. Arrange the cucumber slices and creamy avocado on top.
  8. Drizzle with gochujang and finish with sesame seeds and chopped green onions.

Notes
