Crispy on the outside and gooey on the inside, these Korean Potato Cheese Pancakes blend comfort food with a delightful twist on traditional pancakes.

Ingredients

  • 400 g russet potatoes
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large green onions, finely chopped
  • 1 cup mozzarella cheese, grated
  • Oil for cooking

Instructions

  1. Combine grated potatoes, cornstarch, salt, black pepper, and chopped green onions in a large bowl.
  2. Add grated mozzarella cheese to the mixture and stir gently.
  3. Heat a non-stick pan over medium heat and add a drizzle of oil.
  4. Portion the mixture onto the pan, shaping them into 3-inch pancakes.
  5. Cook pancakes for about 3-4 minutes until golden brown.
  6. Flip them and cook for another 3-4 minutes until both sides are crispy.
  7. Sprinkle extra cheese on each pancake in the last minute of cooking.
  8. Transfer pancakes to a plate and garnish with additional chopped green onions.

Notes

For optimal results, ensure to squeeze out excess moisture from the grated potatoes and avoid overcrowding the pan.
