  • 1 cup unsalted butter, softened
  • 1 3/4 cups sugar
  • 4 large eggs

  • 1 tablespoon lime zest
  • 1 cup buttermilk
  • 1 can (14 oz) sweetened condensed milk
  • 3 large egg yolks
  • 2 cups heavy cream

  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing and lining them with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a mixing bowl.
  3. Beat the softened butter and sugar together in a large mixing bowl until fluffy.
  4. Incorporate the eggs one at a time, mixing well, then stir in the vanilla extract, lime juice, and lime zest.
  5. Gradually add the dry mixture and buttermilk, alternating until the batter is smooth and well-combined.
  6. Divide the batter among the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  7. Cool the cakes completely on a wire rack.
  8. Whisk together sweetened condensed milk, lime juice, lime zest, and egg yolks in a saucepan over medium heat until thickened, then let cool.
  9. Whip the heavy cream until stiff peaks form, then gradually add powdered sugar and vanilla extract.
  10. Assemble your cake by layering the cooled cakes with lime filling in between and frosting the outside with whipped cream.
