A vibrant stir fry combining tender chicken, al dente orzo, and colorful vegetables with a zesty lemon dressing.

  • 1 lb chicken breast, diced into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the orzo according to package instructions, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced chicken, season with salt and pepper, and cook until browned, about 5-7 minutes.
  4. Introduce the mixed vegetables to the skillet and stir-fry for another 3-4 minutes until tender yet crisp.
  5. Combine the cooked orzo with the chicken and vegetables, then pour in the fresh lemon juice. Mix well.
