A delightful combination of tender chicken, vibrant vegetables, and aromatic orzo pasta, all tossed together in a zesty lemon dressing.

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the orzo according to package instructions, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chicken, season with salt and pepper, and cook for about 5-7 minutes until browned.
  4. Toss in the mixed vegetables and stir-fry for an additional 3-4 minutes until tender yet crisp.
  5. Combine the cooked orzo with the chicken and vegetables, pouring in the lemon juice. Mix thoroughly.
  6. Garnish with fresh parsley before serving.

Notes
