Delightful cookies with a crispy top, soft interior, and a burst of lemon curd.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup lemon curd
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the unsalted butter, powdered sugar, lemon zest, and vanilla extract until light and fluffy, about 2-3 minutes.
  3. Add the all-purpose flour and salt, mixing until a soft dough forms.
  4. Scoop the dough into small balls and flatten them slightly, creating a well in the center of each cookie.
  5. Bake for 10-12 minutes, or until edges are lightly golden.
  6. Cool before filling each well with lemon curd.
  7. Sprinkle tops with granulated sugar and use a kitchen torch to caramelize until crisp and golden.
  8. Allow to set for a few minutes before serving.

Notes

For variety, experiment with different fruit curds and serve with whipped cream or ice cream.
