Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. Next, grease and flour an 8-inch round cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time.
  6. Stir in the vanilla extract and lemon zest.
  7. Gradually add the dry ingredients to the wet mixture alternating with the milk and lemon juice, mixing until just combined.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 25-30 minutes, checking for doneness with a toothpick.
  10. Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
  11. Meanwhile, prepare the glaze by whisking together powdered sugar and fresh lemon juice.
