A delightful and refreshing lemon loaf that rivals Starbucks, featuring a moist, fluffy texture and a sweet, tangy glaze.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1/2 cup whole milk
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream the butter and granulated sugar in a large bowl until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each.
  5. Stir in the lemon zest and lemon juice.
  6. Gradually add the dry ingredients to the wet mixture, alternating with whole milk, mixing just until combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Whisk the powdered sugar and lemon juice together and drizzle over the cooled loaf.
