Delightful meatballs in a rich and creamy lemon pepper sauce, perfect for weeknight dinners or special gatherings.

  • 1/2 medium or 1 small yellow onion, grated
  • 4 cloves garlic, divided (2 grated, 2 minced)
  • 1/2 medium bunch fresh parsley, chopped, plus 1 tablespoon reserved for garnish
  • 1/2 cup unseasoned fine dried or panko breadcrumbs
  • 1 cup whole or 2% milk, divided
  • 1 large egg
  • 1/2 teaspoon kosher salt
  • 1 tablespoon plus 1 teaspoon lemon pepper seasoning
  • 1 1/2 pounds ground chicken
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups low-sodium chicken broth

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the onion and garlic by grating them into a bowl.
  3. Chop the parsley, reserving 1 tablespoon for garnish.
  4. Mix the breadcrumbs, 1/4 cup milk, egg, 1 tablespoon lemon pepper seasoning, and salt in the bowl.
  5. Combine the ground chicken with the mixture gently.
  6. Form meatballs using about 2 tablespoons of the mixture each and place on the baking sheet.
  7. Bake for 12-15 minutes, until the internal temperature reaches 165°F (75°C).
  8. Cook the sauce by melting unsalted butter in a skillet, adding minced garlic, and flour.
  9. Whisk in the remaining milk and broth, simmering until thickened.
  10. Coat the baked meatballs in the sauce.
  11. Finish baking for an additional 10 minutes or broil for 2-3 minutes until golden.
  12. Garnish with reserved parsley before serving.
