A delightful Lemon Pretzel Dessert blends a salty pretzel crust with a creamy lemon filling, perfect for spring gatherings or summer barbecues.

Ingredients

  • 2 cups crushed pretzels
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup lemon pudding mix (instant)
  • 2 cups milk
  • Extra whipped topping for garnish
  • Lemon slices for garnish (optional)
  • Crushed pretzels for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed pretzels, melted butter, and granulated sugar. Press into the bottom of a 9×13 inch baking dish and bake for 10 minutes. Set aside to cool.
  3. In another bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped topping, lemon juice, and lemon zest. Spread over cooled pretzel crust.
  4. In a separate bowl, whisk lemon pudding mix and milk until thickened. Spread over cream cheese layer.
  5. Cover and refrigerate for at least 4 hours to set.
  6. Slice into squares and top with extra whipped topping and garnish as desired.

Notes

Allow adequate chilling time for best texture and flavor. Use low-fat cream cheese and sugar-free whipped topping for lighter alternatives.
