  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest
  • 1/2 cup fresh lemon juice
  • 1 cup buttermilk
  • 1 1/2 cups fresh strawberries, chopped
  • 1 cup unsalted butter (for frosting), softened
  • 4 cups powdered sugar
  • 2 tablespoons fresh lemon juice (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup heavy cream
  • 1/2 cup fresh strawberries, pureed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the flour, baking powder, and salt in a medium bowl, whisking them together to aerate the mixture.
  3. Beat the softened unsalted butter and granulated sugar in a large mixing bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then incorporate the vanilla, lemon zest, and lemon juice.
  5. Gradually add the dry mixture to the butter and sugar blend, alternating with buttermilk, beginning and ending with the flour mixture. Mix until just combined.
  6. Fold in the chopped strawberries gently.
  7. Divide the batter evenly between the two prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  9. Beat the unsalted butter with the powdered sugar until smooth for the frosting. Then add lemon juice, vanilla extract, cream, and pureed strawberries, beating until light and fluffy.
  10. Frost the cooled cakes with the prepared frosting, layering between the two cakes and covering the top and sides generously.
