  • 12 tablespoons heavy cream (for frosting)
  • 1 cup fresh strawberries, diced (for filling)
  • 2 tablespoons sugar (for filling)
  • 1 tablespoon lemon juice (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. Whisk together the flour, baking powder, and salt in a medium bowl until well combined.
  3. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, beating well after each addition.
  5. Pour in the vanilla extract, lemon zest, and strawberry puree, mixing until just combined.
  6. Gradually add the dry ingredients into the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients.
  7. Pour the batter evenly into the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  10. Mix the diced strawberries with sugar and lemon juice in a bowl for the filling and let sit for 10-15 minutes to macerate.
  11. Beat the butter for the frosting until creamy, then add the powdered sugar, lemon juice, zest, and salt, mixing until smooth.
  12. Assemble by spreading the strawberry filling on top of one cake layer, followed by a layer of buttercream frosting. Place the second layer on top and frost the entire cake.
  13. Garnish the top with fresh strawberries or additional lemon zest before serving.
