  • 1/4 cup sugar
  • 6 tbsp unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp fresh lime juice
  • Zest of 1 lime
  • 1 cup fresh blackberries
  • Fresh blackberries for topping
  • Lime zest for garnish
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Line a muffin tin with paper liners.
  3. Combine graham cracker crumbs, sugar, and melted butter in a small bowl.
  4. Spoon about 1 tablespoon of the mixture into each muffin cup and press down.
  5. Beat together softened cream cheese and 1/2 cup of granulated sugar until smooth.
  6. Incorporate the eggs one by one, blending after each addition.
  7. Stir in vanilla extract, fresh lime juice, and lime zest until combined.
  8. Fold in the fresh blackberries gently.
  9. Spoon the cheesecake filling over the crusts, filling each about 3/4 full.
  10. Bake for 18-20 minutes until tops appear set.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. Refrigerate for at least 2 hours before serving.
  13. Garnish with fresh blackberries, lime zest, and whipped cream if desired.
