A delightful dessert combining creamy cheesecake, light lime mousse, and a refreshing lime glaze, perfect for any gathering.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tbsp lime zest
  • 1/4 cup fresh lime juice (for glaze)
  • 2 tbsp powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease and line a 9-inch springform pan with parchment paper.
  3. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl.
  4. Press the mixture into the bottom of the prepared pan to form a firm crust.
  5. Bake for 10 minutes, then set aside to cool.
  6. Beat the softened cream cheese and granulated sugar until smooth and creamy, about 3 minutes.
  7. Add the vanilla extract, lime juice, and lime zest and mix well.
  8. Add the eggs one at a time, beating well after each addition.
  9. Pour the cheesecake batter into the prepared crust.
  10. Bake for 45-50 minutes, or until the edges are set.
  11. Turn off the oven and allow the cheesecake to cool inside for 1 hour.
  12. Chill in the refrigerator for at least 4 hours or overnight.
  13. Beat the heavy whipping cream and powdered sugar until stiff peaks form.
  14. Fold in the remaining lime juice and lime zest.
  15. Spread the lime mousse evenly over the chilled cheesecake.
  16. Mix together the fresh lime juice and powdered sugar for the glaze.
  17. Drizzle the glaze over the lime mousse.
  18. Garnish with extra lime zest or slices as desired.

Notes

Ensure cream cheese is at room temperature for best results. Don’t skip the chilling step for optimal texture.
