  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tbsp lime zest
  • 1/4 cup fresh lime juice
  • 2 tbsp powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease and line a 9-inch springform pan with parchment paper.
  3. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl.
  4. Press the mixture into the bottom of the prepared pan to form a firm crust.
  5. Bake for 10 minutes, then remove from the oven and set aside to cool.
  6. Beat the cream cheese and granulated sugar in a large bowl until smooth and creamy, about 3 minutes.
  7. Add the vanilla extract, lime juice, and lime zest, mixing until fully incorporated.
  8. Add the eggs one at a time, beating well after each addition.
  9. Pour the cheesecake batter into the crust and smooth the top.
  10. Bake for 45-50 minutes, until the edges are set and the center is slightly jiggly.
  11. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  12. Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours.
  13. Beat the heavy whipping cream and powdered sugar in a chilled bowl until stiff peaks form for the mousse.
  14. Fold in the remaining lime juice and lime zest until well combined.
  15. Spread the lime mousse over the chilled cheesecake.
  16. Mix together the fresh lime juice and powdered sugar in a small bowl for the glaze.
  17. Drizzle the glaze over the lime mousse.
  18. Garnish with extra lime zest or slices as desired and serve.

Notes

Chill mixing bowls in advance to keep the whipped cream stable. For a gluten-free option, substitute the graham cracker crumbs with ground almonds or gluten-free cookies.
