A comforting casserole that combines creamy mashed potatoes, flavorful meatballs, and gooey melted cheese, all enveloped in zesty marinara sauce.

  • 4 cups mashed potatoes
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup marinara sauce
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Combine the ground beef, breadcrumbs, parmesan cheese, chopped parsley, egg, garlic powder, dried oregano, salt, and pepper in a large mixing bowl.
  3. Mix well until all ingredients are thoroughly blended.
  4. Shape the mixture into small meatballs, about an inch in diameter.
  5. Brown the meatballs in a skillet over medium heat for 5-7 minutes until they are nicely golden.
  6. Spread the prepared mashed potatoes evenly in the bottom of your greased baking dish.
  7. Arrange the browned meatballs on top of the mashed potatoes.
  8. Pour the marinara sauce over the meatballs.
  9. Sprinkle shredded cheddar cheese on top.
  10. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  11. Serve with a dollop of sour cream and chopped green onions, if desired.

Notes

For variations, consider adding sautéed onions or bell peppers to the meatball mixture or using different types of cheese.
