A decadent cheesecake combining citrus brightness with creamy richness, topped with fresh cherries and pistachios for a delightful dessert.

  • 1 1/2 cups crushed pistachios
  • 1/4 cup granulated sugar (for crust)
  • 1/4 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1/4 cup sour cream
  • Zest of 3 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup fresh cherries, pitted and halved
  • Extra lemon juice, to taste
  • Extra lime juice, to taste
  • 2 tablespoons honey
  • 1/4 cup chopped pistachios (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Prepare your crust by pulsing the crushed pistachios, sugar, and melted butter in a food processor until combined. Press into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then cool it while preparing the filling.
  4. Beat the cream cheese and sugar together in a large bowl until smooth.
  5. Add the sour cream, lemon juice, lime juice, and vanilla extract, blending until combined.
  6. Incorporate the eggs one at a time, mixing well after each addition.
  7. Pour the batter into the cooled crust and smooth the top.
  8. Bake for 50 to 60 minutes until edges are set, and the center has a gentle jiggle.
  9. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  10. Refrigerate for at least 4 hours or overnight.
  11. For the topping, combine cherries, lemon juice, lime juice, and honey in a saucepan and cook until cherries soften, about 5-7 minutes.
  12. Cool the cherry mixture to room temperature, then pour over the chilled cheesecake. Garnish with chopped pistachios.
  13. Slice and serve chilled.

Notes

Feel free to use frozen cherries if fresh are not available. Ensure cheese is at room temperature for a smooth batter.
