Luscious Lemon-Lime Cherry Pistachio Cheesecake

A creamy cheesecake infused with lemon and lime, swirled with cherry puree, topped with fresh cherries and pistachios.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup chopped pistachios
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • Zest of 1 lemon
  • Zest of 1 lime
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry puree (fresh or frozen)
  • 1 cup fresh cherries, pitted and halved
  • 1/4 cup cherry preserves or jam
  • 1/4 cup chopped pistachios (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C) and generously grease a 9-inch springform pan.
  2. Mix together the graham cracker crumbs, granulated sugar, melted butter, and chopped pistachios in a small bowl.
  3. Press the mixture firmly into the bottom of the prepared springform pan to form an even crust and bake for 10-12 minutes until golden brown.
  4. Beat the softened cream cheese and sour cream together in a large mixing bowl until smooth.
  5. Add the sugar and continue beating until well combined.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the fresh lemon juice, lime juice, lemon zest, lime zest, and vanilla extract.
  8. Swirl in the cherry puree gently to create a marbled effect.
  9. Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.
  10. Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  11. Turn off the oven and let the cheesecake cool inside for 1 hour with the door slightly ajar.
  12. Transfer the cheesecake to the refrigerator to chill for at least 4 hours, or overnight.
  13. Combine the fresh cherries and cherry preserves in a small saucepan and cook for 5-7 minutes until thickened.
  14. Top the chilled cheesecake with the cherry topping and sprinkle with the remaining chopped pistachios before serving.

Notes

Ensure cream cheese is at room temperature to avoid lumps. The crust should be firmly packed for stability.
