A decadent treat combining rich shortbread, luscious caramel, and velvety dark chocolate, perfect for family gatherings or personal indulgence.

Ingredients

  • 2 cups (250g) all-purpose flour
  • 2 sticks (220g) unsalted butter, cold and cubed
  • ½ cup (100g) granulated sugar
  • 1 cup (220g) light brown sugar
  • 2 sticks (227g) unsalted butter
  • â…“ cup (117g) golden corn syrup
  • 1 can (397g) sweetened condensed milk
  • 1 teaspoon salt
  • 10 oz (300g) dark chocolate, chopped
  • 1 tablespoon vegetable oil
  • 1 tablespoon sea salt (optional, for garnish)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 9-inch square baking pan with parchment paper.
  2. Pulse together flour, cold cubed butter, and granulated sugar until resembling small breadcrumbs. Press into the bottom of the prepared pan and bake for 25-30 minutes until golden brown.
  3. Combine brown sugar, unsalted butter, and corn syrup in a medium saucepan over medium heat. Stir until melted and bubbling, then stir in sweetened condensed milk and salt, cooking for about 5-7 minutes until thickened. Pour over cooled shortbread base and chill in the refrigerator until set.
  4. Melt chopped chocolate with vegetable oil in the microwave until smooth. Pour over the caramel layer and sprinkle with sea salt if desired.
  5. Refrigerate until chocolate is fully set, about 1-2 hours. Lift from the pan using parchment, cut into squares, and serve.

Notes

Allow each layer to cool properly for the best texture. Use cold butter for the shortbread crust and stir the caramel continuously to prevent burning.
