  • 24 ounces cream cheese, softened

  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup pistachio paste or finely ground pistachios
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Chopped pistachios, for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine the graham cracker crumbs, granulated sugar, finely ground pistachios, and melted butter in a bowl until thoroughly mixed.
  3. Press this mixture evenly into the bottom of the prepared pan to create the crust.
  4. Beat the softened cream cheese and granulated sugar together until smooth.
  5. Incorporate the eggs one at a time, beating well after each addition.
  6. Add the sour cream, vanilla extract, and pistachio paste, stirring until blended.
  7. Pour the filling over the prepared crust and bake for 45-50 minutes, until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for an additional hour to cool.
  9. Refrigerate the cheesecake for at least 4 hours until fully cooled.
  10. Beat the heavy cream and powdered sugar until stiff peaks form, then gently fold in additional pistachio paste.
  11. Spread this topping over the chilled cheesecake and garnish with chopped pistachios.
  12. Slice and serve to your guests.
