  • 24 ounces Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 3 Large Eggs
  • 1 cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Pistachio Paste or finely ground pistachios
  • 1/2 cup Heavy Cream
  • 1/4 cup Powdered Sugar
  • Chopped Pistachios, for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine the graham cracker crumbs, granulated sugar, finely ground pistachios, and melted butter until thoroughly mixed.
  3. Press the mixture evenly into the bottom of the prepared pan to create the crust.
  4. Beat the softened cream cheese and granulated sugar together until smooth and free of lumps.
  5. Incorporate the eggs one at a time, beating well after each addition.
  6. Add the sour cream, vanilla extract, and pistachio paste, stirring gently until blended.
  7. Pour the filling over the prepared crust and bake for 45-50 minutes, until the edges are set.
  8. Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly.
  9. Refrigerate the cheesecake for at least 4 hours until fully chilled.
  10. Beat the heavy cream and powdered sugar until stiff peaks form, then gently fold in more pistachio paste.
  11. Spread the whipped cream topping over the chilled cheesecake.
  12. Garnish with chopped pistachios and serve.
