Ingredients

Scale
  • 1 1/2 cups crushed graham crackers
  • 1/4 cup melted butter
  • 3 cups softened cream cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon rose water
  • 1/2 cup finely ground pistachios
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pistachios (for topping)
  • Optional: Rose petals for garnish

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine 1 1/2 cups of crushed graham crackers with 1/4 cup of melted butter in a mixing bowl.
  3. Press the mixture firmly into the bottom of a springform pan to form a solid crust.
  4. Bake the crust for 8 to 10 minutes until golden and fragrant. Set aside to cool completely.
  5. Beat together 3 cups of softened cream cheese and 1 cup of heavy cream using an electric mixer until smooth and creamy, about 3–5 minutes.
  6. Gradually add 1/2 cup of powdered sugar, 1 teaspoon of rose water, 1/2 cup of finely ground pistachios, and 1 teaspoon of vanilla extract, mixing until thoroughly combined and velvety smooth.
  7. Pour the mixture into the cooled crust, smoothing the top with a spatula.
  8. Bake for 45 to 50 minutes; the cheesecake should be set but still have a slight jiggle in the center.
  9. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  10. Top with 1/4 cup of chopped pistachios and optional rose petals before serving.

Notes

Ensure cream cheese is at room temperature before mixing and avoid overmixing to prevent cracking.
