A delightful dessert combining fudgy brownies with fluffy marshmallows, perfect for sharing and creating joyful moments.

Ingredients

  • 100 g butter, melted
  • ½ tsp vanilla essence
  • 1 cup caster sugar
  • 2 eggs
  • 50 g cocoa powder
  • 50 g plain flour
  • ½ tsp baking powder
  • 250 g milk chocolate
  • 1 tbsp coconut oil
  • 180 g marshmallows

Instructions

  1. Preheat your oven to 150°C (fan bake) and line a 20 cm square tin with baking paper.
  2. Melt the butter in a large microwave-safe bowl until fully liquid.
  3. Stir in the caster sugar, vanilla essence, and eggs until glossy.
  4. Sift in the cocoa powder, plain flour, and baking powder; fold until just combined.
  5. Spread the batter evenly into the prepared tin and bake for approximately 25 minutes.
  6. Cool the brownies in the tin for 15 minutes.
  7. For the topping, melt milk chocolate and coconut oil in a heatproof bowl.
  8. Stir in the marshmallows, coating them in chocolate.
  9. Pour the chocolate-marshmallow topping over the cooled brownie base and refrigerate for at least 2 hours.
  10. Once set, lift from the tin using the baking paper, slice into squares, and serve.

Notes

Ensure all ingredients are at room temperature for better blending. Grease the baking tin for easy removal.
