A vibrant dish combining bell peppers with a delicious filling of spinach, feta cheese, and quinoa, offering a delightful Mediterranean experience.

Ingredients

  • 4 bell peppers (red, yellow, or orange)
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cooked quinoa or rice
  • 1/2 cup diced tomatoes
  • 1/4 cup olives, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the tops off the bell peppers and remove the seeds.
  3. Heat a drizzle of olive oil over medium heat and sauté the minced garlic until fragrant.
  4. Add the fresh chopped spinach to the pan and cook until just wilted, about two minutes.
  5. Combine the sautéed spinach with crumbled feta, cooked quinoa or rice, diced tomatoes, sliced olives, dried oregano, salt, and pepper in a bowl.
  6. Stuff the bell peppers with the mixture, pressing down gently.
  7. Place the stuffed peppers upright in a baking dish and drizzle with olive oil.
  8. Bake for 25-30 minutes, or until the peppers are tender.

Notes

Consider adding artichokes or sundried tomatoes for extra depth. For a spicy kick, add crushed red pepper flakes.
