A vibrant, flavorful Mediterranean dish made with crispy flatbread topped with fresh veggies and creamy feta cheese.

Ingredients

  • 2 flatbread crusts (homemade or store-bought)
  • 2 tablespoons olive oil
  • 1/2 cup spinach pesto
  • 8 oz. shredded mozzarella
  • 1 cup halved grape tomatoes
  • 1/2 cup thinly sliced red onion
  • 2.25 oz. can sliced black olives
  • 1 cup quartered artichoke hearts
  • 1/2 cup crumbled feta
  • 1 teaspoon dried oregano
  • Kosher salt (to taste)
  • Fresh chopped parsley (for garnish)
  • Fresh arugula leaves (for garnish)

Instructions

  1. Preheat your oven to 500 degrees Fahrenheit.
  2. Brush both crusts generously with olive oil.
  3. Divide the spinach pesto evenly between the crusts.
  4. Sprinkle the shredded mozzarella cheese over both crusts.
  5. Add the halved grape tomatoes, thinly sliced red onion, sliced black olives, and quartered artichoke hearts.
  6. Crumble the feta cheese over the top, then sprinkle with dried oregano and a pinch of Kosher salt.
  7. Place the flatbreads in the oven and bake for 5-10 minutes.
  8. Remove the flatbreads from the oven and garnish with fresh chopped parsley and arugula leaves.
  9. Serve immediately and enjoy!

Notes

For a spicier kick, add sliced jalapeños or a drizzle of hot sauce before baking. Feel free to customize toppings based on preference.
