Cheesy Beef Enchiladas

Succulent beef wrapped in soft corn tortillas, topped with gooey cheese and aromatic spices, these Cheesy Beef Enchiladas are a comforting dish perfect for any occasion.

  • 1 lb. 80/20 ground beef
  • 1 T. kosher salt, divided
  • 1/2 t. black pepper
  • 1/3 c. minced white onion
  • 2 T. Texas chili powder
  • 1 t. powdered garlic
  • 1 t. onion powder
  • 1/2 t. Mexican oregano
  • 2 t. cumin
  • 1/4 c. flour
  • 2 1/2 c. beef stock
  • 1 t. fresh lemon juice
  • 12 oz. medium cheddar, freshly grated
  • 1216 fresh yellow or white corn tortillas
  • 1 c. oil for frying

Instructions

  1. Heat a skillet over medium heat. Add the ground beef, along with 1/2 tablespoon of kosher salt and black pepper. Sear the beef, breaking it apart with a spatula until it becomes thoroughly browned and crumbly, about 7-10 minutes.
  2. Add in the minced onion and cook for an additional two minutes until softened and fragrant. Stir in the Texas chili powder, garlic powder, onion powder, Mexican oregano, and cumin.
  3. Reduce the heat and sprinkle in the flour, mixing it in to form a roux. Gradually pour in the beef stock while stirring continuously until the mixture reaches a gentle boil.
  4. Simmer for 15-20 minutes to allow the flavors to develop and the sauce to thicken. Season with remaining salt and fresh lemon juice.
  5. Heat oil over medium-high heat in a separate skillet. Lightly fry each tortilla for 1-2 seconds on each side, then drain on paper towels.
  6. Preheat your oven to 400°F and prepare a greased baking dish. On each tortilla, scoop a portion of the beef and cheese mixture, roll tightly, and arrange seam side down.
  7. Pour the remaining chili gravy over the enchiladas and bake for 20 minutes or until bubbling and golden brown.

Notes

Quality ingredients enhance the flavor. You can prep the beef filling ahead of time and just assemble before baking.
