A comforting, meltingly tender pot roast made in a slow cooker, perfect for family meals with delicious beef and hearty vegetables.

Ingredients

  • 34 pounds Chuck Roast
  • Salt and Pepper
  • 4 medium Carrots (Chopped)
  • 4 medium Potatoes (Yukon Gold or Russets)
  • 2 medium Onions (Sliced)
  • 4 cups Beef Broth (Low-sodium preferred)
  • 4 cloves Garlic (Minced)
  • 1 tablespoon Fresh Rosemary (or dried)
  • 1 tablespoon Fresh Thyme (or dried)

Instructions

  1. Generously season the chuck roast with salt and pepper on all sides.
  2. Optional: Sear the roast in a hot skillet with oil until browned.
  3. In the slow cooker, add the chopped carrots, sliced onions, and halved potatoes.
  4. Place the seasoned chuck roast on top of the vegetables.
  5. Combine beef broth, minced garlic, rosemary, and thyme; pour over the roast and veggies.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours, until tender.
  7. Remove roast, let it rest for 10 minutes, then slice and serve with the vegetables and broth.

Notes

Season generously; you can substitute or add other vegetables based on preference. Consider adding Worcestershire sauce for extra flavor.
