  • Bell peppers (any color)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by seasoning the chicken breasts with taco seasoning, salt, and pepper.
  2. In a skillet, heat the olive oil over medium heat, allowing it to shimmer.
  3. Carefully lay in the seasoned chicken and let it sizzle, cooking until golden brown and cooked through—about 6-7 minutes per side.
  4. Once done, remove the chicken from the skillet and let it rest on a cutting board.
  5. Using the same skillet, add the diced tomatoes, corn, bell peppers, and black beans.
  6. Cook for 5-6 minutes, softening the vegetables.
  7. Reduce the heat to low, and sprinkle the shredded cheese over the vegetable mixture.
  8. Stir gently until the cheese melts into a creamy sauce.
  9. Slice the rested chicken breasts and return them to the skillet, mixing everything together.
  10. Serve immediately and enjoy!
