A delightful one-dish meal featuring layers of ground beef, bell peppers, and cheesy goodness, infused with vibrant Mexican flavors.

  • 1 cup long-grain white rice
  • 1 lb lean ground beef
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup bell peppers, diced
  • 1 medium onion, diced
  • 2 tbsp taco seasoning
  • 2 cups chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Coat a large baking dish with nonstick spray.
  3. In a skillet over medium heat, brown the ground beef until thoroughly cooked.
  4. Add onions and bell peppers; sauté until softened, about 5 minutes.
  5. Stir in uncooked rice and taco seasoning, mixing well.
  6. Add canned tomatoes and black beans; mix to combine.
  7. Pour in chicken broth and stir gently.
  8. Transfer mixture to the baking dish, spreading it evenly.
  9. Top with shredded cheese.
  10. Cover with foil and bake for 30 minutes.
  11. Remove foil and broil for an additional 5-7 minutes until cheese is bubbly and golden brown.

Notes

Use low-sodium chicken broth for less salt. You can add extra vegetables like corn or zucchini for nutrition and color.
