  • 2 cups (250g) all-purpose flour
  • 2 sticks (220g) unsalted butter, cold and cubed
  • ½ cup (100g) granulated sugar
  • 1 cup (220g) light brown sugar
  • 2 sticks (227g) unsalted butter
  • â…“ cup (117g) golden corn syrup
  • 1 can (397g) sweetened condensed milk
  • 1 teaspoon salt
  • 10 oz (300g) dark chocolate, chopped
  • 1 tablespoon vegetable oil
  • 1 tablespoon sea salt (optional, for garnish)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 9-inch square baking pan with parchment paper.
  2. Prepare the shortbread base: Pulse together flour, butter, and granulated sugar in a food processor until it resembles breadcrumbs. Press firmly into the pan and bake for 25–30 minutes until golden brown.
  3. Create the caramel layer: In a saucepan, melt brown sugar, butter, and corn syrup together. Stir in condensed milk and salt, cook until thickened, then pour over the cooled shortbread base and chill until set.
  4. Make the chocolate layer: Melt dark chocolate with vegetable oil in the microwave. Pour over the cooled caramel layer and sprinkle with sea salt.
  5. Refrigerate until the chocolate sets, then lift from the pan and slice into squares to serve.

Notes

Ensure each layer is cooled before adding the next for distinct flavors. Use chilled butter for a flaky texture in the shortbread base.
