  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons sugar (optional)
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, chilled
  • Pastel food coloring (optional)
  • Easter candies (mini eggs, jelly beans, chocolate bunnies) for topping
  • Whipped cream for topping (optional)

Instructions

  1. Prepare the crust: Combine graham cracker crumbs, melted butter, and optional sugar in a bowl. Stir until crumbs are coated. Line a muffin tin with paper liners and press the mixture into the base of each liner. Chill in the refrigerator.
  2. Make the cheesecake filling: Beat together softened cream cheese, powdered sugar, and vanilla extract until smooth. Whip the chilled heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  3. Add colors (optional): Divide the filling into bowls and mix in pastel food coloring until evenly distributed.
  4. Assemble the cheesecakes: Spoon filling over chilled crusts, layering colors for visual interest if desired.
  5. Chill and decorate: Refrigerate for 2-3 hours, then top with Easter candies and whipped cream before serving.
