A delightful dessert combining mint and chocolate flavors in a visually stunning cake roll.

  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups heavy cream
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1 cup semisweet chocolate chips
  • Chocolate chips for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until combined.
  3. In a large mixing bowl, beat the eggs and granulated sugar for about 3 minutes until light and fluffy. Add the vegetable oil and vanilla extract, and mix well.
  4. Gradually incorporate the dry mixture into the wet mixture, folding gently to retain the airiness of the batter.
  5. Pour the batter into the prepared pan, spreading it evenly, and bake for 10-12 minutes until a toothpick comes out clean.
  6. While the cake bakes, whip together the heavy cream and powdered sugar until soft peaks form. Add peppermint extract and beat until combined. If using, stir in the green food coloring.
  7. Remove the cake from the oven and let it cool for a few minutes. Roll it from the short end into a tight log and allow it to cool completely while rolled up.
  8. Make the ganache by heating 1/2 cup of the heavy cream until simmering. Pour it over the chocolate chips, stirring until smooth and glossy.
  9. Once the cake has cooled, unroll it carefully. Spread the mint cream filling evenly over the surface, leaving a small border. Roll the cake back up tightly.
  10. Drizzle the ganache over the top, then garnish with chocolate chips and fresh mint leaves. Chill in the refrigerator for at least 60 minutes before serving.

Notes

Allow the cake to cool properly before rolling to avoid breaking. Use room temperature eggs for better cake fluffiness.
