A decadent and refreshing dessert where rich, creamy cheesecake meets invigorating mint flavor, finished with a luxurious chocolate ganache.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 cups softened cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 teaspoons peppermint extract
  • 1/2 cup heavy cream
  • 8 oz semisweet chocolate, finely chopped
  • 1/2 cup chopped mint chocolate candies
  • A pinch of salt

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Grease a 9-inch springform pan with butter.
  3. Combine chocolate cookie crumbs and melted butter in a medium bowl and mix until well-blended.
  4. Press the crumb mixture into the bottom of the prepared pan and bake for 10 minutes.
  5. Beat softened cream cheese and granulated sugar until smooth.
  6. Add the eggs one at a time, beating well after each addition.
  7. Stir in sour cream and peppermint extract until fully combined.
  8. Pour the cream cheese mixture into the cooled crust and spread evenly.
  9. Bake for 50-60 minutes until the edges are set and the center is slightly jiggly.
  10. Cool completely in the oven with the door slightly ajar.
  11. Heat heavy cream until simmering, then remove from heat.
  12. Stir in chopped chocolate until smooth to create a ganache.
  13. Spread ganache over the cooled cheesecake and sprinkle with chopped mint chocolate candies.
  14. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

Ensure cream cheese is at room temperature for better mixing. Use high-quality chocolate for the ganache.
