A richly layered dessert combining chocolate cake, creamy cheesecake, and a luscious fudge layer with the refreshing taste of mint.

Ingredients

  • 1 box chocolate cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup water
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon mint extract
  • 1/4 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • Crushed mint chocolate candies or mint chocolate chips for garnish
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Mix the chocolate cake mix according to package instructions with oil, eggs, and water.
  3. Pour the batter into the prepared pan and bake for 20-25 minutes.
  4. Cool the cake completely in the pan.
  5. Beat the cream cheese and granulated sugar until smooth and creamy.
  6. Add the eggs one at a time, then mix in vanilla and mint extracts, followed by sour cream.
  7. Pour the cheesecake batter over the cooled cake layer.
  8. Bake for 35-40 minutes, then let cool in the oven with the door ajar for 1 hour.
  9. Refrigerate the cake for at least 3 hours or overnight.
  10. Melt chocolate chips and heavy cream together until smooth.
  11. Add the vanilla extract and pour over the chilled cheesecake.
  12. Refrigerate for 30 minutes to set.
  13. Garnish with crushed mint candies and fresh mint leaves before serving.

Notes

Grease and flour your pan properly and use room temperature ingredients for best results. Avoid rushing the cooling processes.
