  • 4 large eggs

  • 4 cups mini marshmallows
  • 16 ounces confectioners’ sugar
  • 1/2 cup whole milk
  • 1/2 cup cocoa powder (for icing)
  • 1/4 cup unsalted butter, softened (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Combine the softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Crack in the eggs one by one, ensuring each mixes in well before adding the next one.
  4. Stir in the vanilla extract to infuse the batter.
  5. Whisk the all-purpose flour and cocoa powder together in a separate bowl.
  6. Gradually add the dry mixture to the butter mixture, alternating with the whole milk.
  7. Fold in the chopped pecans gently.
  8. Pour the batter into the prepared baking pan.
  9. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  10. Prepare the icing by melting butter in a saucepan, then adding cocoa powder and milk, stirring until smooth.
  11. Whisk in the confectioners’ sugar to create the icing.
  12. Sprinkle mini marshmallows over the warm cake, and pour the warm icing over them.
  13. Let it cool slightly before serving.
