A delicious and comforting loaf that combines ripe bananas and juicy blueberries for a delightful treat.

  • 2 ripe bananas, mashed until creamy and smooth
  • 1/2 cup softened unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sour cream
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 5-inch loaf pan.
  2. Whisk together the flour, baking soda, salt, and cinnamon in a mixing bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Follow with the vanilla extract and the mashed bananas until smooth.
  6. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream.
  7. Fold in the blueberries carefully.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-60 minutes until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Use fully ripe bananas for best results. Avoid overmixing to prevent a dense loaf.
