No-Bake Monster Cookie Dough Cheesecake

A delightful, decadent dessert combining layers of creamy cheesecake with chunks of cookie dough, all without the need for baking.

Ingredients

  • ½ cup softened unsalted butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup heat-treated all-purpose flour
  • ½ tsp salt
  • ½ cup mini chocolate chips
  • ½ cup M&M’s
  • 16 oz softened cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Additional mini chocolate chips for topping
  • Additional M&M’s for topping
  • Chocolate syrup for drizzling

Instructions

  1. Make the Cookie Dough Layer – In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add the heat-treated flour and salt, mixing until combined. Fold in the mini chocolate chips and M&M’s, set aside.
  2. Prepare the Cheesecake Filling – In a separate bowl, beat the softened cream cheese until smooth. Gradually mix in the powdered sugar and 1 tsp of vanilla extract. In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  3. Assemble the Cheesecake – Press half of the cookie dough mixture into the bottom of a springform pan, followed by half of the cheesecake filling. Dollop the remaining cookie dough and then the remaining cheesecake filling.
  4. Chill – Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  5. Decorate and Serve – Remove from the springform pan and top with extra mini chocolate chips and M&M’s. Drizzle with chocolate syrup.
  6. Slice and Enjoy – Cut into wedges and serve.

Notes

Ensure cream cheese is at room temperature for easy mixing. Experiment with different add-ins like nuts or other candies.
