Stuffed Sweet Potatoes with Mushroom and Spinach

A comforting dish featuring sweet potatoes filled with a rich stuffing of mushrooms and fresh spinach, topped with creamy cheese.

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cremini mushrooms, sliced
  • 3 cups fresh spinach leaves
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce each sweet potato with a fork, then bake on a baking sheet for 45 to 60 minutes or until fork-tender.
  3. Heat olive oil in a skillet over medium heat. Sauté the chopped onion for about 3 minutes until translucent.
  4. Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 5 minutes.
  5. Stir in the fresh spinach and cook until wilted, about 3 minutes.
  6. In a mixing bowl, combine the softened cream cheese and sour cream. Add the sautéed vegetables along with salt, black pepper, and thyme. Mix until well combined.
  7. Remove the sweet potatoes from the oven, slice them open lengthwise, and fluff the insides with a fork.
  8. Fill each sweet potato with the creamy mushroom and spinach mixture.
  9. Top with grated Parmesan cheese.
  10. Return to the oven and bake for another 10 to 15 minutes until the cheese is bubbly and golden.
  11. Serve warm and enjoy!

Notes

For best results, use fresh ingredients and avoid overcrowding the skillet while sautéing.
