No-Bake Monster Cookie Dough Cheesecake

A delightful no-bake cheesecake layered with edible cookie dough and topped with chocolate chips and M&M’s.

Ingredients

  • ½ cup softened unsalted butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup heat-treated all-purpose flour
  • ½ tsp salt
  • ½ cup mini chocolate chips
  • ½ cup M&M’s (or similar candy)
  • 16 oz softened cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Additional mini chocolate chips and M&M’s for topping
  • Chocolate syrup for drizzling

Instructions

  1. Make the Cookie Dough Layer: Cream together the butter, brown sugar, and granulated sugar until smooth. Mix in flour and salt, then fold in mini chocolate chips and M&M’s. Set aside.
  2. Prepare the Cheesecake Filling: Beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined. Whip heavy cream to stiff peaks and gently fold into cream cheese mixture.
  3. Assemble the Cheesecake: Press half of the cookie dough mixture into the bottom of a 9-inch springform pan. Spread half of the cheesecake filling over it, add spoonfuls of remaining cookie dough, then finish with the remaining cheesecake filling.
  4. Chill: Cover and refrigerate for at least 4 hours or overnight to set.
  5. Decorate and Serve: Remove from pan, top with chocolate chips, M&M’s, and drizzle chocolate syrup over the top.
  6. Slice and Enjoy: Cut into slices and serve to your delighted guests.

Notes

Use room temperature ingredients for a smoother texture. Allow adequate chilling time for the best results.
