A comforting and easy casserole featuring tender chicken, creamy sauces, and fluffy rice, perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (preferably brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water
  • 1 tablespoon butter
  • 1 envelope Lipton Onion Soup mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 13 inch baking pan with butter.
  3. Mix cream of mushroom soup, cream of chicken soup, and 1 can of water in a medium bowl.
  4. Stir in the Minute Rice until well combined.
  5. Pour the mixture into the buttered pan.
  6. Place the boneless chicken breasts on top of the rice mixture.
  7. Sprinkle Lipton Onion Soup mix evenly over the chicken breasts.
  8. Cover the pan tightly with aluminum foil and bake for 60-90 minutes.

Notes

Consider adding frozen peas or chopped carrots for color and nutrition. Let the casserole rest for about 10 minutes after baking for the best results.
