Ingredients

Scale
  • 1 tsp Salt
  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/41/2 tsp Chili Flakes (to taste)
  • 1/4 tsp Dried Thyme
  • 1 medium White Onion, finely diced
  • 3 cloves Garlic, finely diced
  • 500g / 1lb Minced/Ground Beef
  • 2 tbsp Tomato Puree
  • 600ml / 2 1/2 cups Beef Stock
  • 500g / 2 cups Tomato Passata
  • 180ml / 3/4 cup Double/Heavy Cream
  • 1 tsp Worcestershire Sauce
  • 300g / 10.5oz uncooked Conchiglie Pasta
  • Finely diced Fresh Parsley, to serve (optional)
  • Olive Oil, as needed

Instructions

  1. Start by adding a drizzle of olive oil to a large pot over medium heat. Allow the oil to warm before adding the finely diced onion, sautéing until it softens and takes on a golden hue.
  2. Next, add the minced garlic to the pot, frying for an additional minute until aromatic. Then, add in the ground beef, breaking it apart with a wooden spoon until it’s browned and fully cooked.
  3. Stir in the seasoning mix, combining salt, smoked paprika, dried oregano, black pepper, chili flakes, and dried thyme. Allow the beef to absorb the seasonings for a minute before stirring in the tomato puree, cooking for another minute for the flavors to meld.
  4. Pour in the beef stock, tomato passata, heavy cream, and Worcestershire sauce. Stir well to combine, and then add the uncooked conchiglie pasta to the pot.
  5. Bring the mixture to a boiling point, then reduce the heat slightly. Cook until the sauce thickens and the pasta achieves an al dente texture, stirring frequently to prevent sticking. If the sauce thickens too quickly before the pasta is done, add a splash of hot water as needed.
  6. Once cooked, give the pasta a final taste, adjusting seasoning with more salt, pepper, and chili flakes to your preference. Serve warm, garnished with fresh parsley if desired.

Notes

For the best results, use freshly minced garlic. You can add sautéed bell peppers or mushrooms for added texture. Whole grain pasta is a healthier alternative.
