  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1 pound linguine or fettuccine pasta
  • 3 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms. Sauté until tender, about 5 minutes.
  2. Combine the liquids: Pour in the chicken or vegetable broth and heavy cream. Stir until well combined. Bring to a gentle boil, then add the pasta.
  3. Cook the pasta: Lower the heat and cook, stirring occasionally, until pasta is al dente and most liquid is absorbed, about 10-12 minutes.
  4. Add spinach and cheese: Stir in fresh spinach and allow it to wilt for 2-3 minutes. Then, add Parmesan cheese, stirring until melted and well combined.
  5. Garnish and serve: Garnish with fresh parsley and additional Parmesan cheese if desired. Enjoy!

Notes

For extra flavor, marinate mushrooms in balsamic vinegar before cooking. Optional: Add grilled chicken or shrimp for protein.
