A heartwarming soup combining tender cheese-filled ravioli and a fragrant broth, perfect for cozy evenings.

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup spinach, chopped
  • 1 package (9 oz) frozen cheese ravioli
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Fresh Parmesan cheese, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, sautéing for about 3-4 minutes until translucent.
  3. Introduce the minced garlic, continuing to sauté for about 30 seconds.
  4. Pour in the can of diced tomatoes, stirring to combine.
  5. Add the broth, oregano, basil, salt, and pepper; bring to a boil.
  6. Reduce the heat to a simmer, allowing flavors to meld for about 10 minutes.
  7. Add the frozen cheese ravioli, cooking for an additional 4-5 minutes until tender.
  8. Stir in the chopped spinach and cook for another 2-3 minutes until wilted.
  9. Ladle the soup into bowls, garnishing with freshly grated Parmesan cheese.

Notes

For added depth, sauté vegetables until caramelized. Use high-quality broth for best flavor.
